Cajun Shrimp Guacamole…I have been thinking about this mouth watering dish for two days now and finally made it over to Whole Foods to get some Wild Caught Shrimp.  Which I will peel and devein myself:)  This is a simple dish to put together and can be served as an appetizer or even a meal, which is how I will serve it tonight!

I found this delectable recipe on Pinterest because I am completely addicted to the site and spend every free moment perusing food and dream homes…I have issues, I know.

Ingredients:

4 Tbs. Grass Fed butter, such as Kerrygold
1 Tbs. Cajun seasoning

(I googled Paleo Cajun Seasoning and made my own. You should too)

1 pound medium (or extra-large!) shrimp, peeled and deveined…try to get wild caught and raw of course because you are going to cook them!

3 Hass avocados
1/2 cup chopped red bell pepper
1/2 cup thinly sliced scallions
1/4 cup chopped yellow onion
zest of 1 lemon
1 Tbs (or more to your liking) fresh lemon juice
coarse salt and freshly ground pepper

Melt 2 Tbsp of the grass fed butter in a saute pan…add 1/2 tbsp of the Cajun seasoning to the melted butter and mix until combined.

Add 1/2 a lb of the shrimp and sear on one side for about 2 minutes, flip and sear on other side a minute or two. Season with Salt and Pepper, remove from pan and set aside.

Repeat this process with the remainder of the butter, cajun seasoning and shrimp.

Combine the avocados, red bell pepper, scallions, yellow onion and lemon zest…Add salt and pepper and fresh squeezed lemon juice to your liking.

Serve with the Cajun Shrimp…Enjoy!
